1Prepare the Crust
If using a pre-made crust, preheat your oven to 375°F (190°C) and line a 9-inch pie dish with the crust. Prick the bottom with a fork to prevent puffing. If making from scratch, mix flour and salt, cut in cold butter until breadcrumb-like, add ice water, and refrigerate 30 minutes before using.
2Cook the Bacon and Onions
In a large skillet over medium heat, cook the diced bacon until crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. In the same skillet with the bacon fat, sauté the diced onion until softened and lightly golden, about 5 minutes. Return the bacon to the skillet and set aside to cool slightly.
3Make the Custard Filling
In a large bowl, whisk together the eggs, heavy cream, and milk until smooth. Season with salt, white pepper, and nutmeg. The nutmeg is subtle but essential to authentic quiche lorraine. Stir in the cooled bacon and onion mixture. If using cheese, stir that in now as well.
4Assemble and Bake
Pour the filling into the prepared pie crust. The filling should come just below the rim. If using cheese, you can sprinkle a bit more on top for a golden finish. Place the pie on a baking sheet (to catch any drips) and bake at 375°F (190°C) for 35-40 minutes, until the filling is set but still slightly jiggly in the very center. The top should be lightly golden.
5Rest and Serve
Remove the quiche from the oven and let it cool for 10 minutes before slicing. This allows the filling to set completely without being so hot that it's difficult to serve. Quiche lorraine can be served warm or at room temperature, making it perfect for brunch, lunch, or a light dinner. Garnish with fresh parsley if desired.
