1Make the Dressing

In a medium bowl, whisk together the mayonnaise, lemon juice, olive oil, and Dijon mustard. Add the minced garlic, anchovy fillets (or paste), and Worcestershire sauce. Whisk until smooth and well combined. Season with salt and pepper to taste. Stir in the grated Parmesan cheese. The dressing can be made ahead and stored in the refrigerator for up to 3 days.

2Prepare the Lettuce

Wash the romaine lettuce and pat dry with paper towels. Chop or tear the lettuce into bite-sized pieces. Place in a large salad bowl. Make sure the lettuce is dry, as excess water will dilute the dressing.

3Assemble the Salad

Pour the Caesar dressing over the chopped romaine lettuce. Toss gently but thoroughly, making sure all the lettuce is coated with the dressing. Add the croutons and grated Parmesan cheese. Toss again lightly to combine.

4Garnish and Serve

Transfer the salad to serving plates or a large serving platter. Top with additional Parmesan shavings and fresh black pepper if desired. Serve immediately while the croutons are still crispy. This classic salad is perfect as a light lunch or as a side dish for grilled meats and seafood.
