1Prepare the Vegetables
Clean the leeks thoroughly by slicing them in half lengthwise and rinsing between layers to remove any sand. Slice into half-moons. Peel the potatoes and cut into small dice (about 1/2 inch cubes). The vegetables should be roughly the same size for even cooking.
2Sauté the Leeks and Onion
Melt the butter in a large pot over medium heat. Add the sliced leeks and onion. Cook gently for about 5-7 minutes, stirring occasionally, until softened and translucent but not browned. This gentle cooking brings out the leeks' natural sweetness without adding color.
3Add Potatoes and Broth
Add the diced potatoes, broth, salt, white pepper, cayenne, and bay leaf. Bring to a boil, then reduce heat to low and simmer gently for 25-30 minutes until the potatoes are very tender and beginning to break down. The soup should simmer gently, not vigorously.
4Blend Until Smooth
Remove the bay leaf. Using an immersion blender, blend the soup until completely smooth and silky. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender, blend until smooth, and return to the pot. The texture should be velvety without any lumps.
5Add Cream and Season
Stir in the heavy cream. Taste and adjust seasonings with additional salt and white pepper as needed. The soup should taste balanced and slightly delicate—not too salty or peppery. Cook gently for another 2-3 minutes without boiling to combine flavors.
6Chill Thoroughly
Transfer the soup to a bowl and refrigerate for at least 2 hours, preferably 4 hours or overnight. The soup should be served very cold. You can prepare this ahead and keep it refrigerated for up to 2 days. Before serving, taste again and adjust seasonings if needed—cold soup often needs slightly more seasoning than hot soup.
7Serve
Ladle the chilled soup into chilled bowls. Garnish generously with fresh chives. A small dollop of crème fraîche or sour cream on top is traditional and adds elegance. Serve immediately while very cold. The presentation should be pristine and refined—this is a classic French soup meant to impress.
