1Prepare the Base
Heat the vegetable oil in a large pot over medium heat. Add the diced onion and cook until softened and translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant. If using jalapeño, add it now for a slightly spicy kick. Stir well to combine all aromatics.
2Add the Broth and Lentils
Pour the vegetable or chicken broth into the pot. Bring to a boil over high heat. Add the rinsed lentils and stir well. Once the mixture returns to a boil, reduce the heat to medium-low and let it simmer uncovered for about 20 minutes, stirring occasionally. The lentils should begin to soften but still hold their shape.
3Add the Plantain
Add the diced green plantain to the pot after the lentils have been cooking for about 20 minutes. Stir well to distribute the plantain throughout the soup. The plantain adds a subtle starchy sweetness that balances the earthy lentils beautifully. Continue simmering for another 15-20 minutes until both the lentils and plantain are tender.
4Season to Taste
Taste the soup and season generously with salt and pepper. The amount of salt needed depends on how salty your broth is, so start conservatively and adjust as needed. Remember that you can always add more salt, but you can't remove it. The soup should have a well-balanced savory flavor.
5Serve
Ladle the hot soup into bowls. Garnish with fresh cilantro if desired. You can also serve with warm tortillas on the side, or add a squeeze of fresh lime juice for brightness.
