1Prepare the Base
Heat butter or lard in a large, heavy pot or Dutch oven over medium heat. Add sliced onions and cook until soft and golden, about 5 minutes. Add the diced pork belly and cook until lightly browned, about 5-7 minutes. The rendered fat will flavor the entire dish.
2Add Sauerkraut
Add the rinsed sauerkraut to the pot. Stir well to combine with the pork and onions. Cook for 2-3 minutes, stirring occasionally. This allows the sauerkraut to absorb the flavors of the rendered fat.
3Deglaze and Season
Pour in the white wine and scrape the bottom of the pot to deglaze. Add the stock, bay leaf, juniper berries, peppercorns, and caraway seeds (if using). Stir well and bring to a simmer. Season with salt and pepper to taste, remembering that the sausages and ham are already salty.
4Add Meats and Braise
Nestle the sausages and ham slices into the sauerkraut. Cover the pot and reduce heat to low. Braise for 1 to 1.5 hours, stirring occasionally and checking that the liquid hasn't evaporated too much. The mixture should be moist but not soupy. Add more stock if needed.
5Taste and Adjust
Before serving, taste the sauerkraut and adjust seasoning with salt and pepper as needed. Remove the bay leaf. The sausages should be heated through and tender, and the sauerkraut should have absorbed all the wonderful flavors.
6Serve
Transfer to a serving platter or individual bowls. Top with the sausages and ham pieces nestled into the sauerkraut. Serve hot with crusty bread, mustard, and a glass of Alsatian wine. This is a rustic, hearty dish meant to be shared and savored.
