1Prepare Your Setup
Have all your ingredients measured and ready before you start. Flambéing happens very quickly, so mise en place (everything in its place) is essential. Also have vanilla ice cream ready to serve, as the warm bananas will melt it perfectly. Ensure you're using a heavy-bottomed skillet or pan that can handle high heat.
2Melt the Butter
Melt the butter in a large skillet over medium heat. Once the butter is foaming and fragrant (about 1-2 minutes), you're ready to proceed. Don't let the butter brown—we want it golden and nutty, not burned. The butter should smell rich and aromatic.
3Add the Sugar and Spices
Add the brown sugar, cinnamon, nutmeg, and salt to the melted butter. Stir well until the sugar dissolves and creates a caramel-like sauce, about 1-2 minutes. The mixture should smell wonderful—warm, sweet, and spiced. This becomes the base of your flambé sauce.
4Add the Bananas
Carefully place the banana halves into the hot caramel sauce, cut-side down. Cook for about 1-2 minutes until they're lightly caramelized and heated through. You'll see the sauce bubbling around the bananas. Don't overcook them—they should be warm and slightly softened but not mushy. Gently turn them to coat with the sauce.
5Flambé!
Remove the pan from the heat briefly. Pour the rum or brandy into the pan (away from you to avoid splashing). Return the pan to the heat for just a moment, then carefully tilt the pan toward the flame (if you have a gas stove) or use a long lighter to carefully ignite the rum. The flames will be impressive but brief—don't be alarmed! The alcohol will burn off in seconds. If using an electric stove, you can ignite the rum carefully with a long lighter before pouring it in, or skip this step and simply stir the liquor in off heat.
6Serve Immediately
Once the flames die down (usually within 30 seconds), immediately serve the bananas over a scoop of vanilla ice cream in individual dishes. Pour the warm caramel sauce generously over the ice cream. The contrast of warm, spiced bananas with cold, creamy vanilla ice cream is absolutely magical. Serve immediately while everything is at the perfect temperature.
