1Sauté Aromatics

Heat olive oil or butter in a large pot over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add minced garlic and cook for another minute until fragrant. Don't let the garlic brown—keep the heat moderate.

2Add Broth

Pour in the vegetable or chicken broth. Bring to a gentle simmer and cook for 5 minutes to allow flavors to develop. The broth should be steaming but not boiling vigorously.

3Add Avocados

Remove the pot from heat and let it cool slightly. Cut the avocados into chunks and add them to the pot along with the lime juice. The slight cooling prevents the avocados from becoming bitter from high heat, which can happen if cooked too long at high temperatures.

4Blend Until Smooth

Using an immersion blender, blend the soup until completely smooth and creamy. Work in batches with a regular blender if needed, being careful with the hot liquid. The texture should be silky and velvety. Blend for a minute or two to achieve the creamiest result.

5Add Cream and Season

Stir in the heavy cream or sour cream. Add salt, white pepper, and cayenne pepper if using. Taste and adjust seasonings to your preference. The soup should be balanced between creamy, fresh, and slightly spicy.
